[HTTPS-Everywhere] Alternatives when HTTPS anywhere isn't supported?

Hi,
Are the websites listed the only ones that support HTTPS anywhere or are
they just a sample of them?
When I website does not support https, is it possible to use an alternative
method to encrypt data? I am planning to get either Tor of JonDo, but as far
as I understand they cannot encrypt the final step in a connection to a
website, are there alternatives that can?
